A Cracked Pot With A Crock Pot - Orange Chicken
Well I must be crazy. (I am a cracked pot after all - 2 Corinthians 4:7 - look it up!) I am known for my baking, but to be honest if I don't see another cookie for a long long time, I'll be ok. Really. It's hard to be in the health and wellness business and only be showing pictures of powdered sugar and chocolate chips. This holiday season was absolutely wonderful, and I believe I made a lot of people smile with my baked goods. My son says, all those people are going to need to participate in our Shake Off The Holiday Pounds Challenge now. (Including myself!). (If you're interested...let me know...we have an incredible plant based shake..and we're offering a $250 reward for the winner.)

For 2016, I'm not only going to get back on track with my diet/exercise/health, I'm going to try to expand my talent to helping my husband make dinner....he's a busy guy too.
I'm a wife & homeschool mom (my first job), a business owner, a football mom, a piano mom, a youth group mom....(these are just the wife/mom things I do...we won't go into Bible studies, preschool teaching, church attendance....) SO I need to organize my meal times a bit better. I will be out 4 out of 7 nights at least. It is so easy to get caught in the trap of "grabbing a bite" because we're in a rush. When we do this we sacrifice two things....money and nutrition. I can't afford to sacrifice either of those on the altar of "stop at the store and pick up XY so we can have a quick pasta meal" or whatever. NOPE! Not gonna do it.
SO for 2016 my goal is to make at least one crock pot meal a week....and try to keep it healthy"ish" and delicious enough to please the palates of my people! I will most likely start blogging it in my kitchen blog. Krypton's Kitchen. So stay tuned.
For today I will share what I made right here. It was a show stopper! I had to adjust the original recipe for a family of 5 (4 of them men...3 of them going through puberty)
Orange Chicken
2 lbs of boneless skinless chicken breast
1 cup of Sweet Baby Ray's Original Barbecue Sauce
1 cup of Smucker's Orange Marmalade
2 Tbsp. of soy sauce
Brown rice
Broccoli
Instructions:
Place the chicken breasts in the crock pot and cook on high for 3 hours. (That's it, you don't have to do anything else - no seasoning, no nothing. I'm serious! Mind blowing!!!)
After 3 hours take chicken out (drain the juice) and cut into cubes (I tried, it didn't work, it shredded - we loved it that way).
Place back into crock pot.
Mix together the barbecue sauce, marmalade and soy sauce and pour over the chicken and continue to cook on high for 30 minutes.
I took that time to make some brown rice and broccoli.
All done! According to My Fitness Pal app, this meal was 255 calories per serving (not including the rice and broccoli.) Not bad. (Little high on the sugar per serving - so if this is a problem this might not be good, but very low in fat).
It was delicious. The orange aroma spread through my home and it called to my people. Really! (Useless fact: The scent of orange makes people want to spend money. - that's what I read once - I don't think it works). :)

Know Your Place
No pictures today. I'm going to draw them with my words...I promise.
So far, I've been awake for over 33 hours. I'm not joking. My body is adjusting to a new "help-you-get-through-menopause" medication. It is suppose to help with my emotional/mental/get-up-and-go symptoms. Well, it has been...interesting.
Went to the doctor...thinking...I don't want to take anything..I just want to talk about my symptoms and have you make me feel better. Like...by saying I'm normal. She said I was completely normal...and welcome to perimenopause.
She said I was textbook. I don't have to suffer these things (and make everyone suffer around me either) because "this stage could last up to 10 years". I started to well up (because that's what I do now...all the time), and I said "I don't want to be medicated." She said the magic words..."Don't think of it as being medicated..think of is as leveling your hormones out." OK. She gave me options. I evaluated those options. I like somethings of both...so I walked out with...both. More on that later.
This menopause phase of life can be...such a private...personal...and painful battle. Unless you've been through it...it sounds...pathetic. So..I'm choosing this forum to be a little open. It's not been pretty. I've cried...for hours..I've been irritated easily, I've had no motivation at all and I've not been able to recover from things very well..emotionally. (that isn't even mentioning the physical symptoms).
Needless to say, I started taking the medication that is supposed to give me energy, some motivation (because I was SERIOUS lacking that!). This is how it has gone thus far.
Tuesday morning...2 hours after taking it...I fell deadly tired. I mean...like crawl into bed and nap for 4 hours...suddenly. (That was strange!) Well, we can't be doing THAT every day. Wednesday...I decide sleeping is for night time..I will take it at night. I slept pretty good. NICE. Thursday night..why rock the boat..do the same thing you did last night. I did. I've been awake and energetic ever since. YES...34 hours later..and I'm blogging. From 1:00 - 4:00 I was thinking..I wonder if they need me to rake the local parks around town..because I feel like I could do just that. Then I might run a marathon...oh whatever...triathlon! I am a little tired now..and I WILL NOT be taking anything.
So..that has been my trip so far. What is the purpose of this post...."Know Your Place"?
My husband is so dear. He takes this meat out of the freezer and I'm sure was scoping pinterest and has been salivating about red meat. Men do that with red meat. There it was, a beautiful eye round roast. I get home from co-op (remember I've not slept in well over 24 hours by this point in my day)..and I have these instructions printed for me. That was nice of him right? Why is he wanting me to do this? I've never in my life cooked pot roast. I followed the directions carefully...and it never reached the temperature it was supposed to reach. I stuck that thing with 3 thermometers...just in case they weren't working right. Blood just came out of the holes I was making. I'm a baker...we follow the directions...always! I made a few phone calls, shed a few tears. I tried a few things...my friends...one walked me off the kitchen cliff and another friend came over and took my boys to dinner...I sat and ate the salad that I made.
I could end the story there...but it wouldn't be my transparent self that everyone enjoys so much. Children are gone...husband is sleeping...I killed the roast...so...I threw that piece of meat in a bag, got in my bed with the large bowl of salad, a diet cream soda (in a nice fancy glass) and a bowl of chocolate chip cookie dough ice cream! If that doesn't scream menopause...I don't know what does! Don't judge me! I'm working on no sleep for the past 34 hours...and attempting to make a dinner that my husband won't even be able to eat with us. I know my place...it is NOT in the kitchen....unless I'm baking. So I ask...why can't they eat cookies for dinner?

Pushmi-Pullyu & Pizza!!
We are all about learning here in the Engel home!! I have been reading "The Story of Dr. Doolittle", by Hugh Lofting, to Kyle and Shane and they just learned about the Pushmi-Pullyu today. Hence the picture above. Of course, you all know that it is the now extinct, rare two headed-horned animal, which are in the same family as the Abyssinian gazelles and the Asiatic chamois and a decedent of the unicorns. ::wink--wink:: It is a really fun book, especially for animal lovers!Well, as I mentioned, my children aren't the only one's learning. Mom is learning too! I recently took a cooking class at my church and I have been practicing what I've learned. (The kitchen really isn't my favorite place...I'd much prefer reading a book or playing a game on the floor)!! I have made three meal suggestions from my teacher, Pat Howard...her smothered pork chops, chicken in the crock pot and lastly...my boys made their very own pizza!
Shane spread the sauce...
Brendan sprinkled the cheese....Kyle was appalled that there was cheese on pizza....hmmm...he thought when he said "PLAIN" he meant "NOTHING" on it!
Even my neighbor joined us in the fun. That would be Kyle blowing a kiss to the pizza, because it was going to take a miracle for him to eat pizza with cheese...what???
Seriously, doesn't that make your mouth water?! The whole family ate dinner! Yes even Kyle! He gave us the thumbs up! It was fun, CHEAP, and so yummy. I wouldn't personally know, because I must confess, I didn't eat this....way too many points for me! But it made me happy nonetheless, because I didn't hear this: "Umm..this is not my favorite" or "You are kidding me about having to eat that right?" or my personal favorite..."OH, if I have to try that I must have the bucket in case I get sick!" Yes, even Pop and Mike liked it! Next time the only thing I might change is...I'll have to have my children make 2! Not bad for under $3.00 huh?
